Chef Adwait Anantwar
Chef Adwait Anantwar, from Nagpur, left a career in software to pursue cooking. After training in the UAE, he led Mohalla, reworking Indian street food with a fresh, ingredient-led approach. INJA grew from his interest in Japanese precision and Indian depth, shaping a distinct, research-led culinary style.
